Gluten Free Cherry Sweet Rolls

These gluten free cherry and almond sweet rolls are a beautiful way to start your morning. No need for complicated recipes involving dough that takes hours to rise. Brighten your morning with tart cherries steeped in butter  that  are  encased in a fragrant almond pastry.

Cooking Time: 22 mins

Cooking Temp: 375 degrees

Ingredients for the Rolls:

2 c gluten free flour 

2 1/2 t baking powder 

¼ t salt

1 T sugar

5 T cold butter 

¾ c milk 

1 egg

Ingredients for the Filling:

½ C grated almond paste

2 T melted butter 

1 T brown sugar 

¼ c dried cherries

4 oz whipped cream cheese 

3 T milk

⅓ c powdered sugar

Cherry Roll Instructions:

1.Preheat the oven to 375 degrees. Prepare a small 8 inch dish or a muffin tin with non-stick cooking spray.

  1. In a large bowl place the gluten free flour, baking powder, sugar, and salt in a bowl.
  2. Next, pour the butter into the dry ingredients and rub the mixture with your fingertips until the butter is well incorporated. The texture should look like crumbly sand.
  3. In a separate bowl beat the egg and milk together, be sure to reserve 2 tablespoons to use as an egg wash. Then pour the remaining liquid into the dough.
  4. Using a fork mix until a loose ball forms and turn out onto a generously floured surface. I recommend using this silicone mat (https://amzn.to/43wvamo)

6.Knead for a few moments,flour the mat again, then roll the dough out to a 9 inch by 11 inch rectangle.

  1. Take a silicone brush and  paint the entire surface with the melted butter. Then, sprinkle the brown sugar,  and grated almond paste across the face of the rectangle. 
  2. Using the edge of the mat roll the dough into a log, slowly and steadily. If part of the dough gets stuck use a spatula to gentle easy the dough into place.
  3. Cut the log into 9 even rolls using a very sharp knife.
  4. Place the rolls into the prepared muffin tin, and bake.

Icing Instructions:

  1. Place the whipped cream cheese, powdered sugar and milk in a bowl. Mix well, you may need to add more milk to achieve a runny consistency. Pour over the cooled rolls. 
  2. Enjoy.
