Smooth Gluten Free Chocolate Cake
Is gluten free chocolate cake achievable without being claggy or grainy?… The answer, I am happy to report is a resounding yes!!
Because, my mum worked two jobs, she rarely did anything for herself. On our birthdays she would pull time out of thin air to make that day extraordinarily special. Every birthday was seeped in love and incredible thoughtfulness. Hence not one detail was missed. My highlight of the day was my mums classic chocolate cake. Not just any cake mind you. But moist chocolate cake with chocolate frosting and for a long time red hots… I know it’s weird but it was my youthful favorite.
Birthday Traditions:
Beyond, the chocolate cake, was the pointed celebration of my life, where I had been and who I would grow to be. Mum was teaching me that life is a gift and worth celebrating. Since losing my mum, keeping birthday traditions thriving has become a priority for me, especially as a mom. In our house birthdays are a big deal for us personally and for those around us.
Smooth Chocolate Cake Memories:
Due to some sensitivity and health changes as a young adult my dietary needs required me to eliminate gluten from my diet altogether. Naturally, I was worried that birthday cakes were a thing of the past. Luckily gluten free baking and ingredients have improved over the years. Now in 2022 more access to cost effective, gluten free options.
A Sophisticated Cake:
Futhermore, this silky chocolate cake is one of my absolute favorites, you won’t believe it’s gluten free. Perfectly smooth, and oh so chocolatey just like mums. Only this one eliminates the juvenile red hots,and has upgraded to sophisticated oreo crumbles. Take the extra time to craft the ganache topping, you won’t regret it. Enjoy!
Cooking Time: 45 mins
Cooking Temp: 350 degrees
Cake Ingredients:
8 T unsalted butter (cut into small pieces)
4 T vegetable shortening
1 C milk
¾ C cocoa powder
¼ tsp. baking soda
¾ tsp. baking powder
1 tsp. salt
2 c gluten free flour ( recommend King Arthur Gluten Free Flour Blend Shop Here at Amazon)
1 tsp. vanilla
2 eggs
½ C sour cream :
1 ¼ c sugar
Ganache Topping Ingredients:
1 C chocolate chips
1 Tablespoon butter ( melted )
1 t vanilla
1 C heavy cream
½ c crushed oreos
Steps:
Preheat oven to 350 degrees
First, prepare a bundt pan, I highly recommend using this silicone version. Once sprayed with cooking oil it is virtually non- stick and makes for an even cake surface.
Secondly, in a medium saucepan combine the milk, cocoa powder, butter, and vanilla and melt over medium heat, stirring frequently. Once incorporated, remove from heat and set aside to cool for a good 10 minutes. You don’t want the eggs in the next step to curdle due to the heat of this mixture.
Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment combine all of the baking powder, baking soda, sugar, salt, and flour.
Next, beat together the sour cream, sugar and eggs in a separate bowl, and vanilla then marry it with the cooled chocolate mixture. At this point all the wet ingredients are in one bowl and fully mixed.
Add the chocolate mixture to the dry ingredients and mix on low until well incorporated. The batter will be shiny and thickened, yet pourable.
Prepare to Bake:
Then ,pour into a prepared pan and bake on 350 degrees for 45 minutes.
Once the cake is done place the cake pan, on a cooling rack for at least 5 minutes. Then place a large plate over the cake, carefully turning the cake out. Continue to cool thoroughly before icing.
While the cake is cooling, prepare your ganache. In a small saucepan warm the heavy cream, vanilla, and tablespoon of butter just until bubbling. Place the chocolate chips in a separate bowl and pour the warmed mixture over the chocolate. Allow to sit for a few minutes then stir to ensure that all those chips have melted to create the ganache.
Finally, pour the chocolate ganache over your cake, you can use a rubber brush or the back of a spoon to spread the frosting. Top with the crushed topping of your choice. We used crushed oreos which were lovely.
