Gluten Free Pumpkin Spice Bread

Pumpkin Spice Gluten Free Bread :

As the cool breeze of Fall slowly creeps in, this gluten free pumpkin spice bread will warm you from the inside out. Woody cinnamon and allspice creates a symphony of flavor that blends beautifully with the rich chocolate and balanced pumpkin which yields the base of this bread. Make a batch of apple cider or brew a cup of blueberry tea, this is a recipe you will surely want to try. 

Cooking Time: 55 mins

Cooking Temp: 350 degrees

Ingredients:

2 cups  gluten free flour, I use King Arthur’s Gluten Free Flour 

 

3 tsp baking powder 

 

½ tsp. Salt

¼ t xanthum gum 

 

2 t cinnamon

2 t allspice 

 

1 Stick of butter (softened) 

 

1 cup of sugar 

 

1 eggs beaten 



¾ C pumpkin puree 



½  cup chopped walnuts 

 

½ cup chocolate chunks or chocolate chips ( tossed in a teaspoon of flour)

Steps:

  1. First, preheat oven to 350 degrees and prepare a greased loaf pan
  1. Next, in a bowl of a stand mixer or  in a large bowl cream the softened butter, sugar and salt, until the mixture is a pale yellow color.
  1. Mix in the egg .
  1. Add the pumpkin.
  1.  Then, incorporate the flour, baking powder, xanthum gum, cinnamon, and  allspice, mixing well.  Be sure to fold the mixture many times to ensure that the batter is wet and free of flour clumps. 
  1. Lastly add the nuts and chocolate chips to the batter.
  1. Pour mixture into the prepared loaf pan and bake for 55 minutes.
  1. Place bread on a cooling rack for 5 minutes then turn it out and allow it to fully cool before slicing.  ( Easier said than done.)

In closing, a few years back my mother in law bought me a Kitchen Aid Stand Mixer and it is one of the fanciest gifts I have been given. With that said it has served my baking endeavors and has proved to be a wonderful investment. Understandably, not everyone can afford a mixer of that caliber but there are some less expensive mixers available on Amazon these days. Especially, with gluten free baking a stand mixer is such an essential part of achieving a successful bake. Check these mixers out.
