Easy Gluten Free Banana Bread

The Only Banana Bread Recipe You Need :

As kids, my sister Joy and I would always fight each other for the spoon and bowl with the remnants of the mixture still on. We would watch in anticipation as mum vigorously scraped the bowl. Her little hips would sway as she ensured that she scraped just enough to ensure a nice loaf. We descended upon what morsels were left like bears just out of hibernation. Because the mix and this bread is that good. In fact my brother John makes a loaf each week, he is big into Peloton and this bread refuels him after his long, long rides.

Mum always made this with regular flour.  However, gluten free flour produces the same satisfactory result without the unpleasant side effects. This banana bread is quick, easy, and obviously yummy.

Baking Temperature: 350 degrees

Baking Time: 55 minutes

Ingredients

Gluten Free Banana Bread

2 cups  gluten free flour, I use King Arthur’s Gluten Free Flour ( Substitute Regular Flour, same amount) 

2 tsp baking powder 

½ tsp. salt

1 Stick of butter (softened) 

1 cup of sugar 

2 eggs beaten 

3 ripe bananas 

1 cup chopped walnuts (optional)

½ cup chocolate chips (optional)

Steps:

  1. Preheat oven to 350 degrees and prepare a greased loaf pan
  1. Next, in a large bowl cream the softened butter, sugar and salt, until the mixture is a pale yellow color.
  1. Secondly , mix in the beaten eggs.
  1. In a separate bowl mash the ripe bananas using a fork or potato masher, add to the butter mixture.
  1. Incorporate all of the dry ingredients into the wet, mix well. 
  1. Stir in  the nuts and or chocolate chips
  1. Pour mixture into the prepared loaf pan and bake for 55 minutes.
  1. Finally, place bread on a cooling rack for 5 minutes then turn it out and allow it to fully cool before slicing.

    I made your GF Banana Bread and it’s absolutely delicious. Does not taste like gluten free, I used Cup4Cup GF Flour, added cinnamon and vanilla. I also drizzled with a 7UP and powder sugar glaze. Best GF Bread ever. God Bless You for sharing!
