Fudgy Gluten Free Brownies

Got a sweet tooth? Had a bad day with the kids? Or have a bought of unforgiving PMS? Well my friends these fudgy gluten free brownies are here to assuage your current ailments. These rich cocoa brownies are filled with chocolate morsels that melt in your mouth. These are by no means perfect square lunch box brownies, no these beg for a scoop of vanilla ice cream to hold them together.

Gluten Free Brownies =Rich and Fudgy

Don’t walk, run to the pantry and make yourself a pan of these brownies. They only last for a limited amount of time, I think ours lasted two days. Share with the children or eat them after hours, no judgment here. Grab a glass bowl and a whisk as these come together quickly.

Cooking Time: 30 mins

Cooking Temp: 325 degrees

1 stick of butter softened

1 c white sugar 

2 eggs 

1 t vanilla 

2/3 c cocoa

⅓  c gluten free flour

 I recommend King Arthur’s Gluten- Free Flour Blend)

⅛ t baking soda 

1 t baking powder 

1/4 t xanthum gum

½ c chocolate chips

Fudgy Gluten Free Brownies

Steps:

  1. Preheat  the oven to 325, and prepare a 8X8 glass baking dish with non- stick cooking spray. 
  2. In a glass bowl whisk together the softened butter and sugar until pale yellow.
  3. Add the vanilla and eggs, mix.
  4. Incorporate the dry ingredients: cocoa, gluten free flour, baking soda, baking powder, to the wet ingredients.
  5. Lastly, fold in the chocolate chips.
  6. Pour batter into the dish and bake at 325 degrees for 30 mins.
  7. If you can, cool fully before cutting.
