Gluten Free Double Chocolate Cookies

Double Chocolate Gluten Free Cookies:

Full disclosure these double chocolate gluten free cookies are ugly, they certainly aren’t perfect rounds or mounds, but they taste incredible.  Probably not the best opening but it’s honest…The cocoa powder comes to life as it marries with the rich butter and nuttiness of the pecans. Then coarse sea salt and melted chocolate morsels sit atop this already flavorful cookie..ahhh yeah.  One won’t be enough and before long you will be wondering how you started with twelve cookies but only have half left. And if you have children you may want to hide in the bathroom while you enjoy them, otherwise prepare to share.

Cooking Time: 13 mins

Cooking Temp: 375 degrees

Ingredients:

5 T butter softened

¼ c brown sugar 

½ c granulated sugar

1 egg 

1 t vanilla

¾ c cocoa powder 

½ c almond flour  

1 t baking powder 

⅛ t xanthum gum

½ t salt 

½ c chocolate chips

¼ c pecans 

coarse sea salt for sprinkling

Steps:

1.First, preheat oven and prepare two cookie sheets with non-stick oil or parchment paper.

2.Next, i a bowl of a stand mixer fitted with a paddle, or in a large glass bowl, cream together the butter, brown sugar, granulated sugar, and vanilla extract, until fully blended . ( 1 min) 

3.Add the egg until smooth.

4.Incorporate the almond flour, cocoa powder, xanthum gum , salt and baking soda, scraping the sides of the bowl once mid-way through. 

5.Fold in the chocolate chips and pecan pieces, Be sure that the folded ingredients gets fully covered so everything is well incorporated. 

6.Drop dough in balls, one rounded tablespoon, 2” apart, sprinkle with the coarse sea salt, then bake.

7. Lastly, remove from the oven, and place the cookies on a cooking rack directly after removal from the oven.
