I recently stumbled across the hit Netflix series From Scratch, a lovely mini series adapted from a true life memoir written by Tembi Locke. As the story unfolded against the backdrop of Florence it was my una passeggiata lungo il viale dei ricordi ( a walk down memory lane.) So beautifully encapsulated were the sights, sounds and tastes of Italy, the ones I too experienced when I lived abroad. Not only was my taste for romance rekindled but also my palate for Italian fare.
This weeknight gluten free shrimp pasta was a pleasant surprise that came to fruition through trial and error. The gorgeous tomatoes and sliced pimentos in concert together, produce a smokey and slightly sweet homemade sauce. As grilled shrimp and fresh basil ties the whole dish together with savoriness and balance. Try this for your next indoor date night, it won’t disappoint.
Cooking Time: 35 mins
Ingredients:
1 box of gluten free spaghetti ( I use Brilla, prepare as directed on the box).
1 bag frozen shrimp, deveined, with tails removed and thawed
1 28 oz can of crushed tomatoes
1/2 a jar of slice pimentos
½ c chicken stock
1 small red onion, diced
4 cloves of garlic
½ t salt and pepper
½ heavy whipping cream
¼ c fresh basil
1 T olive oil
1 t Italian seasoning
Shaved Parmesan
Steps:
In a large pot saute the onion, garlic for 2 minutes until fragrant, then add the crushed tomatoes, and chicken stock. Bring to a boil, about 5 minutes and remove from heat.
Meanwhile, bring a large pot of salted water to a boil, prepare the pasta in accordance with the instructions on the box. PRO TIP: Be sure to drain your pasta efficiently as gluten free pasta holds a lot of water which if not removed will make your sauce watery.
Next,carefully place the tomato mixture into the pitcher of a blender, placing a towel on top of the lid to prevent splashing. Blend until smooth, 2-3 minutes, and set aside.
Prepare the thawed shrimp: pat dry with a paper towel, and season with pepper, salt, and Italian seasoning.
Heat a large frying pan over medium heat, with 1 tablespoon of olive oil. Once heated, place the shrimp in a single layer and cook for 6-7 minutes turning once. Then remove from heat.
Finally, heat an additional saute pan over medium heat, pour the sauce into the pan and finish by stirring in the heavy whipping cream and fresh basil. Add the shrimp and heat for 2 additional minutes.
Place a generous amount of pasta into a dish and top with sauce, followed by a generous portion of shaved parmesan cheese.
