Gluten Free Empanadas are a thing of the past right? Let’s face it gluten free baking is an art form in and of itself. Moreover,  finding recipes and being successful at said recipes is a challenge. Originally, when I went gluten free it seemed a limiting infringement on my flour enriched, empanada loving diet. There were many recipes that took hours, and multiple ingredients only to become a half cooked,  inedible mess atop my stove. 

 

Naturally, a hungry girl has to eat, so I justified eating gluten only to regret it later. Empanadas were my cheat of choice. In fact there was an empanada shop that opened up at the nearby marketplace that would goed me into buying and eating multiple mushroom filled pies.

Gluten Free Empanadas are Now Trending.

As it turns out you don’t have to cheat with gluten. Because air fryer gluten free empanadas do indeed exist and they are delicious. These air fryer empanadas are filled with warm swiss, sweet onion and white wine filling.  Encased in a buttery crust with a delicate flake, which is translation for food bliss. In addition, pair them with an Apricot Blonde beer or a glass of Sauvignon Blanc.

Cooking Time: 11 mins

Cooking Temp: 370 degrees

2 C gluten free flour

2 T buttermilk powder 

½ t salt

¼ t xanthum gum 

2 T shortening

8 T butter  (cut into small cubes) 

2 eggs

¼ + ⅛ cup of milk 

 

½ on a sweet onion diced

1 C heavy whipping cream 

½ lbs. Ground Italian sausage

1 t Italian seasoning 

½ t salt

½ t pepper 

2 T Marsala Cooking Wine

The Best Gluten Free Empanadas

Steps for the Dough:

  1. To begin, in a bowl of a food processor combine the gluten free flour, buttermilk powder and salt. 
  2. Next, place the butter and shortening into the bowl, and pulse until the mixture is crumbly. 
  3. With the mixer running on low, crack one egg directly into the shoot. Pour the milk in directly after.
  4. After about 20 seconds a ball of dough will form within the bowl. Place the dough onto a lightly floured piece of plastic wrap or parchment paper. Wrap and refrigerate for 1 hour or until ready to use.

 

The Filling:

5. To continue, in a frying pan on medium, cook  the sausage thoroughly.

6. Add diced onion, salt, Italian seasoning, and pepper, 2 mins\

7. Incorporate the heaving whipping cream and allow it to bubble.

8.Stir in the Marsala wine, turn off the heat and let it cool5

Assembly Instructions:

9.Remove the dough from the fridge, and prepare for assembly.

10. Prepare an egg wash: beat 1 egg and 1 T milk together

Assembly Continued:

12. On a generously floured non- stick surface cut the dough into 8 even portions, roll each one out into an oval ¼ inch thickness.

13. Place swiss cheese, and  a generous spoonful of the sausage and onion filling on one half of the dough, then fold the empanada closed. 

14. Brush the tops of the empanada with the egg wash, using a sharp knife create a small x on the top to allow for steam release  

15. Spray the basket of your air fryer basket with non stick spray or use a parchment liner before placing the empanadas inside.

16. Lastly, cook and be sure to use a tong or spatula when removing food from the air fryer to avoid wrist burns.

17. Enjoy.
